This is a light and crisp varietal mead with botanical notes of pine and juniper in the aroma, similar but more subtle than the Oregon Radish Blossom if you're familiar with that varietal. There is a bite on the palate coming from the effervescence but also a butteriness -- perhaps beeswax -- in the flavor that is comforting. Some would say it is gin-like in the finish. Pair this with savory curried dishes.
