This is a crisp, brut dry, fully effervescent varietal with initial hints of nut, wood, apricot, subtle peach and vanilla, transitioning to fresh apple and apple butter. The finish is lightly suggestive of beeswax.   The acidity is calibrated for rich food pairing but the varietal will stand alone elegantly between courses, or as a celebratory toasting libation.
