About Heidrun
(It's pronounced "Hi-drun")
We produce naturally sparkling meads (wines made from honey rather than grapes) using the traditional French Méthode Champenoise. Our singular objective is to reveal honey’s exotic floral essence in mead varietals that are light, dry, crisp and refreshing.
FROM FLOWER TO FLUTE
Our wines begin as the sweet aromatic liqueur found deep in the nectary of flower blossoms. Harvested by the honey bee one blossom at a time, this nectar is transformed into honey within the comb of the hives. At season’s end, our beekeepers extract this liquid gold so that we may transform it into flutefuls of lusciously effervescent ambrosia.
Just as every flower has its fragrance, every variety of honey has its own distinct essence – aromatics that range in character from the primitive to the sublime. From these honeys, we produce distinct, naturally sparkling varietal meads, utilizing the traditional French Methode Champenoise. Our singular objective as meadmakers is to reveal the exotic floral essence of honey in mead varietals that are light, crisp, bubbly and refreshing – and always served ice cold.
ABOUT THE MEADMAKER
An affinity for all things fermented first lured Gordon Hull away from his nascent career as an environmental geologist. Initially trained as a brewer of beer, Gordon was drawn to honey fermentation by the simple idea that producing wine from the nectar of flowers ought to be among the more captivating and beautiful endeavors one can undertake. His meadmaking principles are equally simple: craft elegant, clean, and crisp honey wines that express the natural character and terroir of the honeys from which they are composed.
A few notes for your visit
For everyone’s sake and comfort, we are adhering to the protocols required by marin County health guidelines.
- Protocols require guests to don masks at all times unless situated at your table. For our staff’s comfort we ask that you re-don your mask whenever your server is tableside.
- Pick up your tasting glasses at check in. We ask that you buss your glasses and any other items when you are done.
- Hand sanitizer is available around the property. Please use it early and often.
- Social distancing is required.
- We disinfect all surfaces after each tasting
