SPARKLING MEAD
Streams of tiny translucent bubbles rising from a crystal flute of sparkling wine mesmerize like endless strings of dancing pearls. This is beauty with purpose; effervescence adds edge to body, it awakens our palate with a prickle, and it inundates our expectant senses with the brilliant scent of honey. Sparkling mead is as close to ambrosia as we have come and that is why we make it.
We currently offer two styles of naturally sparkling mead:
Our Methode Champenoise varietals are produced using the ultimate expression of the sparkling winemaker's craft—the centuries-old French method of tirage, riddling and disgorgement. These meads contain no sediment.
Our rustic Bottle Fermented varietals are more lightly effervescent and contain sediment from the secondary fermentation in the bottle. For a cloudy, country-style mead one need only agitate the bottle slightly before opening.
