There is a direct correlation between the quality of a honey and the methods of the beekeeper. Artisan apiarists are meticulous farmers; at once equal parts botanist, taxonomist, entomologist and meteorologist. They are keen predictors of floral cycles and other rhythms of local ecology. They know what flora is in bloom, when and where. They assiduously tend to the health of their bee colonies, and harvest their honey when it is at its prime. They extract using a minimum of heat and filtration and they store their honey inventory in a manner that optimizes the long term stability of it's delicate aromatics. Serious beekeepers are aware of honey essence and work hard and smart to preserve it in their product.

To obtain the most aromatic honey for our mead we've developed long-term relationships with beekeepers who have this artisan's passion for honey. They provide us with certifications of authenticity that verify each honey's provenance and floral source and then we test these honeys in the lab to ensure that they satisfy our standards of excellence.

Any mead can only be as good as the honey from which its made.
